Students discover new seasonal foods and experiment with familiar foods. Class will meet at the Santa Barbara Farmer's Market for an educational shopping experience, then return to the kitchen to prepare purchased ingredients. Fresh vegetables and salads are paired to create a delicious appetizer, entree, and fresh fruit dessert. Class Cost: $39.00 Materials Cost: $12.00

Latin American Cuisine Made Simple for You

Experience the exotic dishes of Latin America by making the constantly changing menu highlighting a variety of countries. Grilling Beyond the BBQ

Roast, grill and bake veggies, fruit desserts, salads, biscuits, soup (yes, soup) and protein entrees! Think beyond the 'hunk of meat' BBQ and explore the many ways of the grill. Learn about marinades and rubs too. We'll also prepare fabulous picnic salad sides to satisfy both the meat lovers and the vegans! Grilled Summer Gazpacho Soup; Grilled Corn Salsa with Seasonal Seafood; Fabulous Grilled Vegetable Platter; Grilled Pineapple; Kebobs, Grilled Grass Fed Steak with Caramelized onions over Wilted Greens; Chicken Sausage over Spring Greens and Buttermilk Dressing are just some of the dishes you will enjoy preparing in class. Dinner Tonight at the CLL

Cheese and Tomato Tart Recipe

Serves 6-8
Level: easy 
Prep time: 20 minutes 


Needed: Shallow fluted ceramic quiche or 9-inch metal tart pan.


INGREDIENTS:

For the crust: 
  • 1 package Pâte Brisée (puff pastry), defrosted 
  • 1 Tablespoon Dijon mustard

For the filling: 
  • 3 large eggs 
  • 3 finely diced shallots 
  • 3 gratings of fresh nutmeg 
  • 6 drops Tabasco or Siracha Sauce
  • 1 teaspoon Herbs de Provence 
  • 2 medium tomatoes, sliced 1/4 inch thick 
  • 1-1/2 cup whole milk or half-and-half 
  • 1-1/2 cup grated Swiss cheese or Gruyère
  • 1 cup grated extra sharp cheddar 
  • Salt & freshly ground pepper

PREPARATION:
  1. Preheat oven to 400 degrees.
  2. Fit Pâte Brisée into tart or quiche pan, squeezing the seams together. Flute the top by pinching, trim with small knife. Pastry must be chilled for at least 20 minutes, and can be covered and chilled for up to 3 days.
  3. Using a pastry brush, brush 1 T Dijon mustard on the interior of the pastry.
  4. Whisk eggs and milk together, add herbs, shallots and cheeses.
  5. Pour mixture into tart pan, place sliced tomatoes on top.
  6. Bake on a sheet pan for 20 minutes or until top looks browned. May be served warm, or at room temperature.

Master the subtleties of chili selection and preparation. Learn where to purchase and how to identify chilies of all varieties and potency. You'll sample chilies and sauces while learning recipes. 10 a.m. – 1 p.m.
Learn how to prepare homemade dishes such as Mexican Tamales wrapped in banana leaves, Mexican stews, Cuban-style Pork Roast, Peruvian Ceviche, Brazilian Moqueca (seafood stew with coconut milk) and Argentinean Empanadas. You will learn different cooking techniques and explore unique ingredients and new spices. Class Cost: $52 Materials Cost: $30

This class will explain the concept of emphasizing fresh foods that are nutrient dense, with lots of naturally-occurring vitamins and minerals and avoids foods that are processed and less nutritional.
