Jewelry Workshop
with Keith Hale
Tuesday, June 3rd
1 p.m. – 4 p.m.
This class allows experienced jewelry students to work on personal projects with instructor support. Demonstrations will be provided by the instructor in a variety of jewelry making techniques and methods pertaining to student’s individual needs. Materials will not be provided; students will be expected to provide materials for their own projects. Students should have completed beginning jewelry classes and be familiar with the use of the jewelry lab. This class is not structured for beginning students. Class Cost: $18 Register Now!

Dinner Tonight at the CLL

Cheese and Tomato Tart Recipe

Serves 6-8
Level: easy 
Prep time: 20 minutes 


Needed: Shallow fluted ceramic quiche or 9-inch metal tart pan.


INGREDIENTS:

For the crust: 
  • 1 package Pâte Brisée (puff pastry), defrosted 
  • 1 Tablespoon Dijon mustard

For the filling: 
  • 3 large eggs 
  • 3 finely diced shallots 
  • 3 gratings of fresh nutmeg 
  • 6 drops Tabasco or Siracha Sauce
  • 1 teaspoon Herbs de Provence 
  • 2 medium tomatoes, sliced 1/4 inch thick 
  • 1-1/2 cup whole milk or half-and-half 
  • 1-1/2 cup grated Swiss cheese or Gruyère
  • 1 cup grated extra sharp cheddar 
  • Salt & freshly ground pepper

PREPARATION:
  1. Preheat oven to 400 degrees.
  2. Fit Pâte Brisée into tart or quiche pan, squeezing the seams together. Flute the top by pinching, trim with small knife. Pastry must be chilled for at least 20 minutes, and can be covered and chilled for up to 3 days.
  3. Using a pastry brush, brush 1 T Dijon mustard on the interior of the pastry.
  4. Whisk eggs and milk together, add herbs, shallots and cheeses.
  5. Pour mixture into tart pan, place sliced tomatoes on top.
  6. Bake on a sheet pan for 20 minutes or until top looks browned. May be served warm, or at room temperature.

10 a.m. – 2 p.m.
Master the subtleties of chili selection and preparation. Learn where to purchase and how to identify chilies of all varieties and potency. You'll sample chilies and sauces while learning recipes. Experience the world of chilies and your dishes will never be the same. Class Cost: $35 Materials Cost: $15

3 Mondays, beginning May 12th
10 a.m. – 1 p.m.
Learn how to prepare homemade dishes such as Mexican Tamales wrapped in banana leaves, Mexican stews, Cuban-style Pork Roast, Peruvian Ceviche, Brazilian Moqueca (seafood stew with coconut milk) and Argentinean Empanadas. You will learn different cooking techniques and explore unique ingredients and new spices. Class Cost: $52 Materials Cost: $30

This class will explain the concept of emphasizing fresh foods that are nutrient dense, with lots of naturally-occurring vitamins and minerals and avoids foods that are processed and less nutritional. Learn how to prepare delicious dishes that fit the Paleo dietary plan, including dessert! Class Cost: $53 Materials Cost: $20

Learn about marinades and rubs too. You will also learn how to prepare fabulous picnic salad sides to satisfy both the meat lovers and the vegans! Class Cost: $53 Materials Cost: $20

Turn the ordinary into extraordinary with a one of a kind sauce. Technique is everything in the creation of an elegant sauce.
